I adapted this recipe from a peanut cluster recipe a couple of years ago.
It has been a Pesach favorite in my house ever since.
Ingredients:
1 lb slightly salted almonds
1 cup brown sugar
½ cup honey
1 stick magarine
½ tsp salt
½ tsp baking soda
½ tsp vanilla extract
1 lb semi sweet chocolate
Directions:
Place the brown sugar, honey, margarine and salt in a med pot over a small-medium flame.
Stir constantly until it comes to a boil.
Let mixture boil exactly 5 minutes without stirring.
Add the vanilla and baking soda.
Mix well and add in the almonds.
Drop by tablespoons on heavy duty foil.
Freeze till firm.
Melt the chocolate over a double boiler or microwave.
Dip the clusters into the chocolate and refrigerate.
Yields 15-20 clusters
