Blue Potato Flower

Blue potato flowers look beautiful on cauliflower butternut and yellow splitpea soups-make sure your soup is thick enough so that potatoes dont sink.

Place blue potatoes in pot-cover with water and cook till soft enough to get a fork through-do not overcook.

Cut 1/4 " slices of potatoes and then cut each slice in half.

Arrange you sliced potatoes to look like a flower.
