3 Fun+ Healthy Sandwiches

It’s not only adults who like an original presentation – kids love it too!

Here are some ideas that are “out of the (lunch)” box” that are sure to make the “same old same old” so fresh and appealing.

 

Tuna Roll

Supplies:

  • 3 pieces white or whole wheat bread
  • Tuna salad
  • Carrots, cucumbers, red peppers cut into thin strips
Directions:
  1. Cut the crust off each slice of bread and roll out as thin as possible with rolling pin.
  2. Place the long side of the rolled out bread closest to you.
  3. Thinly spread 1/3 of the tuna onto 1/3 of the bread – lengthwise.
  4. On top of the tuna, arrange some carrots, cucumbers, and pepper strips – making sure not to overstuff the roll (a little goes a long way).
  5. Starting with the side closest to you (the filled end) tightly roll and press to seal into a roll. ( dab a little mayonnaise across the end of the roll to act as a glue, sealing the roll)
  6. Cut the roll into 4 even pieces and repeat with the remaining bread and tuna.

Makes 12 pieces

Checkerboard Lunch

Supplies:

  • White bread
  • Pumpernickel  bread (whole wheat can also be used)
  • Choice of sandwich filling
  • 2” cookie cutter – optional
  • Black olives
  • Grape tomatoes
  • Toothpicks

Directions;

  1. Using your cookie cutter or knife, cut out squares from both breads. Make into sandwiches.
  2. Arrange sandwiches on a platter in a checkerboard pattern alternating the white and pumpernickel breads.
  3. Place olives and tomatoes on toothpicks and arrange on checkerboard.

Tip:  Use the crusts and “scraps” from the bread to make your own homemade croutons.

Red Light Green Light 1-2-3

Supplies:

  • 2 slices of bread
  • Choice of sandwich filling
  • Lettuce
  • Yellow pepper – diced into small pieces
  • Cherry tomato – sliced
  • Apple corer

Directions;

  1. Spread sandwich filling onto a slice of bread.
  2. Place tomato slices on the top third of the bread, the yellow peppers in the middle, and the lettuce on the bottom third.
  3.  On another slice of bread, punch out 6 holes (3 on each side) with an apple corer.
  4. Place on top, and cut in two so you create two traffic lights.
